How To Make Chicken Pho In A Crock Pot?

Ingredients:

  • 2 lbs boneless, skinless chicken breasts
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 inch piece of ginger, sliced
  • 4 cups chicken broth
  • 4 cups water
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 1 cinnamon stick
  • 2 star anise
  • 2 cloves
  • 1 tsp coriander seeds
  • 8 oz rice noodles
  • Fresh herbs (cilantro, Thai basil, mint)
  • Sliced jalapenos
  • Lime wedges

Instructions:

  1. Place the chicken breasts, onion, garlic, and ginger in the crock pot.
  2. Add the chicken broth, water, fish sauce, soy sauce, sugar, cinnamon stick, star anise, cloves, and coriander seeds.
  3. Cover and cook on low for 6-8 hours, or on high for 4-6 hours.
  4. Remove the chicken breasts from the crock pot and shred the meat with two forks.
  5. Strain the broth and discard the solids.
  6. Cook the rice noodles according to the package instructions.
  7. Divide the noodles among serving bowls and top with the shredded chicken.
  8. Pour the hot broth over the noodles and chicken.
  9. Serve the pho with fresh herbs, sliced jalapenos, and lime wedges.
